Blueberry and blackberry vanilla mousse. Encased in a white chocolate cage, topped with a blueberry and black berry compote. Plated with filtered compote liquid.
White chocolate is such a pain in the ass to work with. :/ Very temperamental with its weird ass melting temperature. |
